Welcome to Chef Matt’s Food

I created this website to share the recipes and signature flavors of the food I love to create! I want to inspire families, young cooks and chefs to create dishes full of amazing flavor and nutrition. I am a U.S. Army veteran, seasoned professional chef and currently a Culinary Instructor at a local college.  I was brought up cooking very young in my mom’s kitchen. I have cooked and loved cooking since I was old enough to see the oven burners! As time went on, my knowledge of cooking increased through my travels around the world. I was stationed overseas in Korea and the Middle East among others and got to learn a lot through world class chefs. I wish to share my favorite dishes and ideas with you while offering advice on techniques and tips to make amazing food from scratch. I went on to attend Johnson & Wales University and earned an associates in culinary arts, a bachelors in culinary & hospitality management and a masters in business. I was also employed by Johnson & Wales teaching young chefs the skills of the trade. I have learned to find my place and comfort in making culinary dishes to inspire. I have a lot in store for everyone including videos, how –to demos, tips and tricks coming in the very near future.

Here are the rankings of a couple of common peppers on the Scoville Scale.

  1. 2.2 million SHU: Carolina Reaper pepper
  2. 1.3 million SHU: Naga Viper pepper
  3. 1 million SHU: Ghost pepper
  4. 500,000 SHU: Red Savina pepper
  5. 100,000–350,000 SHU: Habanero pepper; Scotch bonnet pepper
  6. 30,000 – 50,000: Cayenne Pepper
  7. 6,000–23,000 SHU: Serrano pepper
  8. 5,000–10,000 SHU: Chipotle pepper
  9. 2,500–5,000 SHU: Jalapeño pepper
